Spicy Beef and Okra Stir-Fry (Sautée de Bœuf Épicé aux Gombos)

Ingredients
- 500g beef, thinly sliced
- 250g fresh okra, trimmed and sliced
- 2 onions, thinly sliced
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 2 tomatoes, diced
- 2 tablespoons vegetable oil
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 2 cups cooked rice, for serving
Instructions
- In a large skillet, heat the vegetable oil over medium-high heat.
- Add the sliced beef and cook until browned, then remove from the skillet and set aside.
- In the same skillet, add the onions and garlic, and sauté until softened.
- Add the sliced okra, bell pepper, and tomatoes to the skillet, and cook for a few minutes until slightly tender.
- Return the cooked beef to the skillet, then sprinkle the paprika, cayenne pepper, ground ginger, salt, and pepper over the mixture. Stir well to combine.
- Cover the skillet and let the stir-fry simmer for 5-7 minutes, stirring occasionally.
- Once the beef and okra are tender and the flavors have melded, remove from heat.
- Serve the spicy beef and okra stir-fry over cooked rice.
