Spicy Beef and Okra Stir-Fry (Sautée de Bœuf Épicé aux Gombos)

Ingredients

  • 500g beef, thinly sliced
  • 250g fresh okra, trimmed and sliced
  • 2 onions, thinly sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 2 tomatoes, diced
  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 cups cooked rice, for serving

Instructions

  1. In a large skillet, heat the vegetable oil over medium-high heat.
  2. Add the sliced beef and cook until browned, then remove from the skillet and set aside.
  3. In the same skillet, add the onions and garlic, and sauté until softened.
  4. Add the sliced okra, bell pepper, and tomatoes to the skillet, and cook for a few minutes until slightly tender.
  5. Return the cooked beef to the skillet, then sprinkle the paprika, cayenne pepper, ground ginger, salt, and pepper over the mixture. Stir well to combine.
  6. Cover the skillet and let the stir-fry simmer for 5-7 minutes, stirring occasionally.
  7. Once the beef and okra are tender and the flavors have melded, remove from heat.
  8. Serve the spicy beef and okra stir-fry over cooked rice.
