Spicy Beef and Potato Curry (Curry de Bœuf Épicé aux Pommes de Terre)

Ingredients
- 1.5 lbs beef stew meat, cut into cubes
- 4 potatoes, peeled and diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ginger, grated
- 2 tomatoes, chopped
- 2 tbsp curry powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 2 cups beef broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the beef cubes and brown on all sides.
- Stir in the curry powder, cumin, paprika, and cayenne pepper. Cook for 2 minutes to toast the spices.
- Add the chopped tomatoes and beef broth. Bring to a simmer and cook for 30 minutes.
- Add the diced potatoes and continue to cook for another 20-30 minutes, or until the beef is tender and the potatoes are cooked through.
- Season with salt and pepper to taste.
- Serve the spicy beef and potato curry hot, with steamed rice or crusty bread.
