Spicy Beef and Potato Curry (Curry de Bœuf Épicé aux Pommes de Terre)

Ingredients

  • 1.5 lbs beef stew meat, cut into cubes
  • 4 potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ginger, grated
  • 2 tomatoes, chopped
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 2 cups beef broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the curry powder, cumin, paprika, and cayenne pepper. Cook for 2 minutes to toast the spices.
  5. Add the chopped tomatoes and beef broth. Bring to a simmer and cook for 30 minutes.
  6. Add the diced potatoes and continue to cook for another 20-30 minutes, or until the beef is tender and the potatoes are cooked through.
  7. Season with salt and pepper to taste.
