Instructions
- Heat the vegetable oil in a pot over medium heat. Add the garlic, ginger, Sichuan peppercorns, and chili bean paste. Stir-fry until fragrant.
- Add the beef slices and cook until browned.
- Pour in the beef broth, soy sauce, and sugar. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Cook the fresh noodles according to package instructions.
- Divide the cooked noodles into serving bowls and ladle the spicy beef broth over the noodles.
- Garnish with chopped green onions and serve hot.
