Instructions

  1. Heat the vegetable oil in a pot over medium heat. Add the garlic, ginger, Sichuan peppercorns, and chili bean paste. Stir-fry until fragrant.
  2. Add the beef slices and cook until browned.
  3. Pour in the beef broth, soy sauce, and sugar. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Cook the fresh noodles according to package instructions.
  5. Divide the cooked noodles into serving bowls and ladle the spicy beef broth over the noodles.
  6. Garnish with chopped green onions and serve hot.
