Spicy Beef Noodle Salad (Bún bò Huế)

Ingredients

  • 1 lb beef brisket, thinly sliced
  • 8 cups beef broth
  • 3 lemongrass stalks, bruised and chopped
  • 3 shallots, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp fish sauce
  • 1 tbsp shrimp paste
  • 1 tbsp sugar
  • 1 tbsp chili oil
  • 8 oz rice vermicelli noodles, cooked and drained
  • Bean sprouts, mint, cilantro, Thai basil, and lime wedges for serving

Instructions

  1. In a large pot, bring the beef broth to a boil. Add the lemongrass, shallots, garlic, fish sauce, shrimp paste, sugar, and chili oil. Reduce the heat and simmer for 1.5 hours.
  2. Add the sliced beef brisket to the broth and cook for an additional 30 minutes until the beef is tender.
  3. To assemble the salad, divide the cooked rice vermicelli noodles among serving bowls. Top with the beef brisket and ladle the hot broth over the noodles.
  4. Serve the Bún bò Huế noodle salad with bean sprouts, mint, cilantro, Thai basil, and lime wedges on the side for garnish and extra flavor.
