Ingredients
- 1 lb beef brisket, thinly sliced
- 8 cups beef broth
- 3 lemongrass stalks, bruised and chopped
- 3 shallots, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp fish sauce
- 1 tbsp shrimp paste
- 1 tbsp sugar
- 1 tbsp chili oil
- 8 oz rice vermicelli noodles, cooked and drained
- Bean sprouts, mint, cilantro, Thai basil, and lime wedges for serving
Instructions
- In a large pot, bring the beef broth to a boil. Add the lemongrass, shallots, garlic, fish sauce, shrimp paste, sugar, and chili oil. Reduce the heat and simmer for 1.5 hours.
- Add the sliced beef brisket to the broth and cook for an additional 30 minutes until the beef is tender.
- To assemble the salad, divide the cooked rice vermicelli noodles among serving bowls. Top with the beef brisket and ladle the hot broth over the noodles.
- Serve the Bún bò Huế noodle salad with bean sprouts, mint, cilantro, Thai basil, and lime wedges on the side for garnish and extra flavor.
