Spicy Beef Rendang

Ingredients

  • 2 lbs beef, cut into cubes
  • 4 shallots, finely chopped
  • 5 cloves garlic, minced
  • 3 red chilies, sliced
  • 1-inch galangal, sliced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 1 turmeric leaf, torn
  • 1 can coconut milk
  • 1 cup water
  • Salt to taste
  • Sugar to taste

Instructions

  1. In a large pot, combine the beef, shallots, garlic, chilies, galangal, lemongrass, kaffir lime leaves, turmeric leaf, coconut milk, and water.
  2. Cook over low heat for 2 hours, stirring occasionally.
  3. After 2 hours, add salt and sugar to taste. Continue cooking for another hour until the beef is tender and the sauce has thickened.
  4. Remove from heat and serve hot with steamed rice.
