Spicy Beef Rendang
Spicy Beef Rendang is a traditional dish from Acehnese Cuisine that is rich in flavor and spices. It is a slow-cooked beef dish that is perfect for those who enjoy a bit of heat in their meals.
Ingredients
- 2 lbs beef, cut into cubes
- 4 shallots, finely chopped
- 5 cloves garlic, minced
- 3 red chilies, sliced
- 1-inch galangal, sliced
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 1 turmeric leaf, torn
- 1 can coconut milk
- 1 cup water
- Salt to taste
- Sugar to taste
Instructions
- In a large pot, combine the beef, shallots, garlic, chilies, galangal, lemongrass, kaffir lime leaves, turmeric leaf, coconut milk, and water.
- Cook over low heat for 2 hours, stirring occasionally.
- After 2 hours, add salt and sugar to taste. Continue cooking for another hour until the beef is tender and the sauce has thickened.
- Remove from heat and serve hot with steamed rice.
