Spicy Beef Stew (Ragoût de Bœuf Épicé)

Ingredients

  • 1.5 kg beef, cut into cubes
  • 2 onions, chopped
  • 4 tomatoes, diced
  • 3 cloves garlic, minced
  • 2 hot peppers, chopped
  • 2 tbsp tomato paste
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp ground ginger
  • 1/2 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the beef with salt, pepper, paprika, and cayenne pepper.
  2. Heat the vegetable oil in a large pot over medium heat.
  3. Add the seasoned beef and brown on all sides, then remove from the pot and set aside.
  4. In the same pot, sauté the onions, garlic, and hot peppers until softened.
  5. Add the diced tomatoes, tomato paste, and ground ginger, then stir to combine.
  6. Return the browned beef to the pot and add enough water to cover the meat.
  7. Simmer over low heat for 1.5 to 2 hours, or until the beef is tender and the sauce has thickened.
  8. Adjust seasoning with salt and pepper if needed.
