Spicy Beef Stew (Ragoût de Bœuf Épicé)
Ragoût de Bœuf Épicé, or Spicy Beef Stew, is a traditional dish from Burkinabé Cuisine that is rich in flavor and perfect for warming up on a cold day.
Ingredients
- 1.5 kg beef, cut into cubes
- 2 onions, chopped
- 4 tomatoes, diced
- 3 cloves garlic, minced
- 2 hot peppers, chopped
- 2 tbsp tomato paste
- 2 tsp paprika
- 1 tsp cayenne pepper
- 1 tsp ground ginger
- 1/2 cup vegetable oil
- Salt and pepper to taste
Instructions
- Season the beef with salt, pepper, paprika, and cayenne pepper.
- Heat the vegetable oil in a large pot over medium heat.
- Add the seasoned beef and brown on all sides, then remove from the pot and set aside.
- In the same pot, sauté the onions, garlic, and hot peppers until softened.
- Add the diced tomatoes, tomato paste, and ground ginger, then stir to combine.
- Return the browned beef to the pot and add enough water to cover the meat.
- Simmer over low heat for 1.5 to 2 hours, or until the beef is tender and the sauce has thickened.
- Adjust seasoning with salt and pepper if needed.
