Spicy Beef Tripe (Málà Pào Dǔ)
Málà Pào Dǔ, or Spicy Beef Tripe, is a popular dish in Tianjin Cuisine known for its spicy and numbing flavors. This dish is perfect for those who enjoy bold and fiery flavors.
Ingredients
- 1 lb beef tripe, cleaned and sliced
- 1/4 cup Sichuan peppercorns
- 1/4 cup dried red chilies
- 3 tbsp vegetable oil
- 4 cloves garlic, minced
- 2-inch ginger, sliced
- 3 green onions, chopped
- 1/4 cup soy sauce
- 2 tbsp Chinese cooking wine
- 1 tbsp sugar
- Salt to taste
- 4 cups water
Instructions
- In a pot of boiling water, blanch the beef tripe for 10 minutes. Drain and set aside.
- In a dry pan, toast the Sichuan peppercorns and dried red chilies until fragrant. Grind them into a fine powder using a mortar and pestle.
- Heat vegetable oil in a wok over medium heat. Add garlic, ginger, and green onions. Stir-fry until fragrant.
- Add the beef tripe to the wok and stir-fry for 5 minutes.
- Stir in the ground Sichuan peppercorn and chili powder, soy sauce, cooking wine, sugar, and salt. Mix well.
- Pour in the water and bring to a boil. Reduce heat and simmer for 2 hours until the beef tripe is tender.
- Serve the Málà Pào Dǔ hot, garnished with additional green onions if desired.
