Spicy Beef Tripe (Málà Pào Dǔ)

Ingredients

  • 1 lb beef tripe, cleaned and sliced
  • 1/4 cup Sichuan peppercorns
  • 1/4 cup dried red chilies
  • 3 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 2-inch ginger, sliced
  • 3 green onions, chopped
  • 1/4 cup soy sauce
  • 2 tbsp Chinese cooking wine
  • 1 tbsp sugar
  • Salt to taste
  • 4 cups water

Instructions

  1. In a pot of boiling water, blanch the beef tripe for 10 minutes. Drain and set aside.
  2. In a dry pan, toast the Sichuan peppercorns and dried red chilies until fragrant. Grind them into a fine powder using a mortar and pestle.
  3. Heat vegetable oil in a wok over medium heat. Add garlic, ginger, and green onions. Stir-fry until fragrant.
  4. Add the beef tripe to the wok and stir-fry for 5 minutes.
  5. Stir in the ground Sichuan peppercorn and chili powder, soy sauce, cooking wine, sugar, and salt. Mix well.
  6. Pour in the water and bring to a boil. Reduce heat and simmer for 2 hours until the beef tripe is tender.
  7. Serve the Málà Pào Dǔ hot, garnished with additional green onions if desired.
