Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 1/4 cup dried red chili peppers
- 2 tbsp Sichuan peppercorns
- 3 cloves garlic, minced
- 1-inch piece of ginger, thinly sliced
- 3 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp Chinese cooking wine (Shaoxing wine)
- 1 tsp sugar
- Salt to taste
Instructions
- Heat the vegetable oil in a wok or large skillet over high heat.
- Add the dried red chili peppers and Sichuan peppercorns to the hot oil, and stir-fry for about 30 seconds until fragrant.
- Add the chicken pieces to the wok and stir-fry for 5-6 minutes until they are cooked through and slightly browned.
- Push the chicken to the side of the wok, and add the garlic, ginger, and green onions to the center. Stir-fry for 1-2 minutes until aromatic.
- Combine the chicken with the aromatics, then add the soy sauce, Chinese cooking wine, sugar, and salt. Stir-fry for another 1-2 minutes to allow the flavors to meld.
- Transfer the spicy Beijing chicken to a serving dish and garnish with additional chopped green onions, if desired.
