Spicy Braised Beef Noodles (麻辣炖牛肉面)

Ingredients

  • 500g beef brisket, cut into chunks
  • 200g dried wheat noodles
  • 2 tbsp Sichuan peppercorns
  • 3-4 dried red chilies
  • 3 slices ginger
  • 3 cloves garlic, minced
  • 2 green onions, chopped
  • 2 star anise
  • 1 cinnamon stick
  • 1 tbsp doubanjiang (broad bean paste)
  • 1 tbsp soy sauce
  • 1 tbsp Chinese cooking wine
  • 1 tsp sugar
  • Salt to taste
  • 6 cups beef or chicken broth
  • 2 cups water

Instructions

  1. In a large pot, dry roast the Sichuan peppercorns and dried red chilies over medium heat until fragrant. Remove and set aside.
  2. Heat some oil in the same pot and brown the beef chunks. Remove and set aside.
  3. Saute the ginger, garlic, and green onions until aromatic. Add the doubanjiang, soy sauce, and Chinese cooking wine. Stir well.
  4. Return the beef to the pot. Add the roasted Sichuan peppercorns and dried red chilies, star anise, cinnamon stick, sugar, and salt. Pour in the beef or chicken broth and water. Bring to a boil, then reduce heat and simmer for 1.5-2 hours until the beef is tender.
  5. Cook the dried wheat noodles according to package instructions. Drain and divide among serving bowls.
  6. Ladle the spicy braised beef and broth over the noodles. Serve hot and enjoy!
