Spicy Chengdu Style Wontons (成都红油抄手)

Ingredients

  • 1 pack of wonton wrappers
  • 1/2 pound ground pork
  • 2 tablespoons soy sauce
  • 2 tablespoons Chinkiang vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 green onions, finely chopped
  • 1 tablespoon Sichuan peppercorns
  • 2 tablespoons red chili oil
  • 1 teaspoon sugar
  • 1/4 cup chicken broth

Instructions

  1. In a bowl, mix the ground pork, soy sauce, Chinkiang vinegar, sesame oil, garlic, ginger, and green onions.
  2. Place a small amount of the pork mixture in the center of each wonton wrapper. Moisten the edges with water and fold the wrapper in half to create a triangle, then press the edges to seal.
  3. In a pot of boiling water, cook the wontons for 4-5 minutes until they float to the surface. Remove and drain.
  4. In a separate pan, heat the Sichuan peppercorns in oil until fragrant. Add the red chili oil, sugar, and chicken broth. Simmer for 2-3 minutes.
  5. Pour the spicy sauce over the cooked wontons and toss to coat evenly.
