Ingredients
- 2 lbs chicken, cut into pieces
- 2 ripe plantains, peeled and sliced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup chicken broth
- 1 can diced tomatoes
- 2 tablespoons tomato paste
- 2 teaspoons paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chicken pieces and brown them on all sides. Remove and set aside.
- In the same pot, sauté the onions, garlic, and red bell pepper until softened.
- Stir in the tomato paste, paprika, cayenne pepper, and thyme, cooking for 1-2 minutes.
- Add the diced tomatoes, chicken broth, and browned chicken pieces back to the pot. Season with salt and pepper.
- Cover and simmer for 30 minutes.
- Add the sliced plantains to the pot and continue to simmer for another 15-20 minutes until the chicken is cooked through and the plantains are tender.
- Adjust seasoning if needed and serve hot.
