Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 ripe plantains, peeled and sliced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup chicken broth
  • 1 can diced tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chicken pieces and brown them on all sides. Remove and set aside.
  3. In the same pot, sauté the onions, garlic, and red bell pepper until softened.
  4. Stir in the tomato paste, paprika, cayenne pepper, and thyme, cooking for 1-2 minutes.
  5. Add the diced tomatoes, chicken broth, and browned chicken pieces back to the pot. Season with salt and pepper.
  6. Cover and simmer for 30 minutes.
  7. Add the sliced plantains to the pot and continue to simmer for another 15-20 minutes until the chicken is cooked through and the plantains are tender.
  8. Adjust seasoning if needed and serve hot.
