Spicy Chicken And Rice Balls

Ingredients

  • 1 lb boneless, skinless chicken thighs, diced
  • 1 cup uncooked white rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cayenne pepper
  • 1 tsp ground paprika
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 2 tbsp vegetable oil

Instructions

  1. In a bowl, mix the diced chicken with the cayenne pepper, paprika, ginger, cinnamon, salt, and pepper. Let it marinate for 10 minutes.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Add the marinated chicken to the pot and cook until browned.
  4. Stir in the uncooked rice and chicken broth. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Once the rice is cooked, remove the pot from the heat and let it sit, covered, for 5 minutes.
  6. Using wet hands, shape the rice and chicken mixture into small balls. Serve hot, garnished with chopped cilantro.
