Spicy Chicken And Rice Balls
Spicy Chicken and Rice Balls are a popular dish in Sierra Leone, known for their flavorful and aromatic combination of spices and herbs.
Ingredients
- 1 lb boneless, skinless chicken thighs, diced
- 1 cup uncooked white rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cayenne pepper
- 1 tsp ground paprika
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- 2 cups chicken broth
- 2 tbsp vegetable oil
Instructions
- In a bowl, mix the diced chicken with the cayenne pepper, paprika, ginger, cinnamon, salt, and pepper. Let it marinate for 10 minutes.
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the marinated chicken to the pot and cook until browned.
- Stir in the uncooked rice and chicken broth. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Once the rice is cooked, remove the pot from the heat and let it sit, covered, for 5 minutes.
- Using wet hands, shape the rice and chicken mixture into small balls. Serve hot, garnished with chopped cilantro.
