Ingredients
- 1 pound chicken feet
- 2 tablespoons Sichuan peppercorns
- 3 dried red chilies
- 3 green onions, chopped
- 3 slices ginger
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons Chinese black vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 4 cups water
Instructions
- In a pot, bring water to a boil. Add the chicken feet and blanch for 5 minutes. Remove and drain.
- In a separate pot, dry roast the Sichuan peppercorns and dried red chilies until fragrant. Crush them using a mortar and pestle.
- Heat some oil in a wok, then stir-fry the green onions, ginger, and garlic until aromatic.
- Add the crushed Sichuan peppercorns and dried red chilies to the wok, then stir in the soy sauce, Chinese black vinegar, sugar, and salt.
- Pour in the water and add the blanched chicken feet. Simmer for 1 hour until the chicken feet are tender and the sauce has thickened.
- Transfer to a serving dish and garnish with additional chopped green onions if desired.
