Spicy Chicken Feet (辣味凤爪)

Ingredients

  • 1 pound chicken feet
  • 2 tablespoons Sichuan peppercorns
  • 3 dried red chilies
  • 3 green onions, chopped
  • 3 slices ginger
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons Chinese black vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 cups water

Instructions

  1. In a pot, bring water to a boil. Add the chicken feet and blanch for 5 minutes. Remove and drain.
  2. In a separate pot, dry roast the Sichuan peppercorns and dried red chilies until fragrant. Crush them using a mortar and pestle.
  3. Heat some oil in a wok, then stir-fry the green onions, ginger, and garlic until aromatic.
  4. Add the crushed Sichuan peppercorns and dried red chilies to the wok, then stir in the soy sauce, Chinese black vinegar, sugar, and salt.
  5. Pour in the water and add the blanched chicken feet. Simmer for 1 hour until the chicken feet are tender and the sauce has thickened.
  6. Transfer to a serving dish and garnish with additional chopped green onions if desired.
