Spicy Chicken Stew (kadon Pika)

Ingredients

  • 3 lbs chicken, cut into pieces
  • 2 onions, sliced
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 2 hot chili peppers, chopped
  • 1 cup coconut milk
  • 2 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chicken and brown on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, sauté the onions, garlic, tomatoes, bell pepper, and hot chili peppers until the vegetables are softened.
  4. Return the chicken to the pot and add the coconut milk, chicken broth, soy sauce, and vinegar. Bring to a boil, then reduce the heat and simmer for 45-50 minutes, or until the chicken is cooked through and the flavors have melded together.
  5. Adjust the seasoning with salt and pepper, if needed.
  6. Serve the spicy chicken stew hot, accompanied by steamed rice or crusty bread.
