Spicy Chicken Vindaloo

Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1-inch ginger, grated
  • 3-4 green chilies, chopped
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 2 tbsp white vinegar
  • 1 cup tomato puree
  • Salt to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pan over medium heat. Add cumin seeds and mustard seeds, and let them sizzle for a few seconds.
  2. Add chopped onions, garlic, ginger, and green chilies. Sauté until the onions are golden brown.
  3. Stir in turmeric, paprika, and cayenne pepper. Cook for 1-2 minutes.
  4. Add the chicken pieces and cook until they are browned on all sides.
  5. Pour in the white vinegar and tomato puree. Season with salt and simmer for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Garnish with fresh cilantro and serve hot with steamed rice or naan.
