Spicy Chicken with Peanuts (Gōngbǎo Jīdīng)

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 1/2 cup unsalted peanuts
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp Chinese black vinegar
  • 1 tbsp sugar
  • 1 tsp Sichuan peppercorns
  • 2 tbsp vegetable oil
  • 2 dried red chilies, chopped

Instructions

  1. Marinate the chicken with soy sauce and set aside for 10 minutes.
  2. In a small bowl, mix together the soy sauce, Chinese black vinegar, and sugar to make the sauce.
  3. Heat the vegetable oil in a wok over high heat. Add the Sichuan peppercorns and dried red chilies, and stir-fry for 30 seconds.
  4. Add the marinated chicken and stir-fry until cooked through.
  5. Add the peanuts, green onions, garlic, and ginger, and stir-fry for another 2 minutes.
  6. Pour the sauce over the chicken and peanuts, and stir-fry for an additional 2 minutes.
  7. Transfer to a serving dish and garnish with additional chopped green onions, if desired.
