Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 cup onion, thinly sliced
- 1/2 cup lemon juice
- 1/4 cup vegetable oil
- 2 tablespoons Dijon mustard
- 2-3 hot peppers, finely chopped
- 4 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chicken thighs, onion, lemon juice, vegetable oil, Dijon mustard, hot peppers, garlic, salt, and pepper. Mix well to ensure the chicken is coated with the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Heat a large skillet over medium-high heat. Add the marinated chicken thighs and cook for 5-6 minutes on each side, or until golden brown.
- Reduce the heat to medium, add the sliced onions from the marinade, and cook for an additional 5 minutes until the onions are soft and translucent.
- Pour any remaining marinade over the chicken and onions, cover the skillet, and let it simmer for 25-30 minutes, or until the chicken is fully cooked and the sauce has thickened.
- Serve the Spicy Chicken Yassa hot with steamed rice or couscous.
