Spicy Chickpea Curry (bhojpuri Ghugni)

Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 3-4 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in the ginger-garlic paste and green chilies, and cook for 2 minutes.
  4. Add the tomato puree, turmeric powder, coriander powder, red chili powder, and salt. Cook until the oil separates from the masala.
  5. Add the soaked chickpeas and garam masala. Mix well and cook for 5 minutes.
  6. Pour in enough water to cover the chickpeas, cover the pot, and simmer for 30-35 minutes or until the chickpeas are tender.
  7. Garnish with fresh cilantro and serve hot.
