Spicy Chili Crab Noodles

Ingredients

  • 1 lb fresh crab, cleaned and cracked
  • 8 oz rice noodles
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 tbsp ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp chili paste
  • 1/2 cup chicken broth
  • 2 green onions, chopped
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Boil the rice noodles according to package instructions, then drain and set aside.
  2. Heat vegetable oil in a large pan over medium heat. Add onion, garlic, red chilies, and ginger. Sauté until fragrant.
  3. Add crab pieces to the pan and cook for 5 minutes.
  4. Stir in soy sauce, oyster sauce, chili paste, and chicken broth. Simmer for 5 minutes.
  5. Add the cooked noodles to the pan and toss to combine with the crab mixture.
  6. Season with salt and pepper, then garnish with green onions before serving.
