Spicy Chorizo Paella

Ingredients

  • 1 cup bomba or calasparra rice
  • 2 cups chicken broth
  • 1/2 lb Spanish chorizo, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads
  • 1 lb mixed seafood (such as shrimp, mussels, and squid)
  • 1/4 cup frozen peas
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. In a paella pan or large skillet, cook the chorizo over medium heat until browned. Remove the chorizo and set aside.
  2. In the same pan, sauté the onion, garlic, and bell pepper until softened.
  3. Add the rice, smoked paprika, and saffron threads, and stir to coat the rice with the spices.
  4. Pour in the chicken broth and bring to a simmer. Cook for 15 minutes, stirring occasionally.
  5. Add the mixed seafood and frozen peas, and continue to cook for another 10-15 minutes until the seafood is cooked through and the rice is tender.
  6. Season with salt and pepper, and garnish with the cooked chorizo. Serve with lemon wedges.
