Ingredients
- 400g rice vermicelli noodles
- 1 can (400ml) coconut milk
- 500ml chicken or vegetable broth
- 200g prawns, peeled and deveined
- 200g chicken breast, thinly sliced
- 1 stalk lemongrass, bruised
- 4 kaffir lime leaves
- 4 tbsp laksa paste
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 1 cup bean sprouts
- 1 hard-boiled egg, halved
- Fresh cilantro and lime wedges for garnish
Instructions
- Soak the rice vermicelli noodles in hot water according to package instructions, then drain and set aside.
- In a large pot, heat the laksa paste for a few minutes until fragrant.
- Pour in the coconut milk and chicken or vegetable broth. Add lemongrass, kaffir lime leaves, fish sauce, and brown sugar. Bring to a simmer.
- Add the prawns and chicken, and cook until they are just cooked through.
- Divide the soaked noodles into serving bowls and ladle the hot laksa soup over the noodles.
- Garnish with bean sprouts, hard-boiled egg, cilantro, and lime wedges.
