Spicy Coconut Noodle Soup (nyonya Laksa)

Ingredients

  • 400g rice vermicelli noodles
  • 1 can (400ml) coconut milk
  • 500ml chicken or vegetable broth
  • 200g prawns, peeled and deveined
  • 200g chicken breast, thinly sliced
  • 1 stalk lemongrass, bruised
  • 4 kaffir lime leaves
  • 4 tbsp laksa paste
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 cup bean sprouts
  • 1 hard-boiled egg, halved
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. Soak the rice vermicelli noodles in hot water according to package instructions, then drain and set aside.
  2. In a large pot, heat the laksa paste for a few minutes until fragrant.
  3. Pour in the coconut milk and chicken or vegetable broth. Add lemongrass, kaffir lime leaves, fish sauce, and brown sugar. Bring to a simmer.
  4. Add the prawns and chicken, and cook until they are just cooked through.
  5. Divide the soaked noodles into serving bowls and ladle the hot laksa soup over the noodles.
  6. Garnish with bean sprouts, hard-boiled egg, cilantro, and lime wedges.
