Spicy Coconut Prawns

Ingredients

  • 500g prawns, cleaned and deveined
  • 1 cup coconut milk
  • 2 onions, finely chopped
  • 3 tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 inch ginger, grated
  • 4 cloves garlic, minced
  • 1 teaspoon turmeric powder
  • 1 tablespoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons coconut oil
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a pan over medium heat.
  2. Add onions, green chilies, ginger, and garlic. Sauté until onions are golden brown.
  3. Add tomatoes and cook until they turn mushy.
  4. Stir in turmeric powder, red chili powder, and coriander powder. Cook for 2 minutes.
  5. Pour in coconut milk and bring to a gentle simmer.
  6. Add the prawns and cook for 5-7 minutes or until they are cooked through.
  7. Sprinkle garam masala and salt. Mix well.
  8. Garnish with fresh cilantro and serve hot with steamed rice or appam.
