Ingredients
- 1 whole chicken, about 3 lbs, cut into pieces
- 3 green onions, chopped
- 3 slices of ginger
- 2 cloves of garlic, minced
- 2 tbsp soy sauce
- 1 tbsp Chinese black vinegar
- 1 tbsp sesame oil
- 1 tbsp sugar
- 1 tsp Sichuan peppercorns, toasted and ground
- 1 tsp chili flakes
- Salt to taste
- Ice cubes (for chilling)
Instructions
- In a large pot, add the chicken pieces, green onions, ginger, and garlic. Cover with water and bring to a boil. Reduce heat and simmer for 20-25 minutes until the chicken is cooked through.
- Remove the chicken from the pot and place it in a bowl of ice water to cool and firm up.
- While the chicken is cooling, prepare the dressing by mixing soy sauce, Chinese black vinegar, sesame oil, sugar, Sichuan peppercorns, chili flakes, and salt in a bowl.
- Once the chicken has cooled, remove it from the ice water, pat dry with paper towels, and cut it into bite-sized pieces.
- Pour the dressing over the chicken and toss to coat evenly.
- Chill the dressed chicken in the refrigerator for at least 30 minutes before serving.
