Spicy Cold Chicken (辣拌凉鸡)

Ingredients

  • 1 whole chicken, about 3 lbs, cut into pieces
  • 3 green onions, chopped
  • 3 slices of ginger
  • 2 cloves of garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp Chinese black vinegar
  • 1 tbsp sesame oil
  • 1 tbsp sugar
  • 1 tsp Sichuan peppercorns, toasted and ground
  • 1 tsp chili flakes
  • Salt to taste
  • Ice cubes (for chilling)

Instructions

  1. In a large pot, add the chicken pieces, green onions, ginger, and garlic. Cover with water and bring to a boil. Reduce heat and simmer for 20-25 minutes until the chicken is cooked through.
  2. Remove the chicken from the pot and place it in a bowl of ice water to cool and firm up.
  3. While the chicken is cooling, prepare the dressing by mixing soy sauce, Chinese black vinegar, sesame oil, sugar, Sichuan peppercorns, chili flakes, and salt in a bowl.
  4. Once the chicken has cooled, remove it from the ice water, pat dry with paper towels, and cut it into bite-sized pieces.
  5. Pour the dressing over the chicken and toss to coat evenly.
  6. Chill the dressed chicken in the refrigerator for at least 30 minutes before serving.
