Spicy Cold Noodles (laphing)

Ingredients

  • 200g mung bean starch noodles
  • 2 tbsp Sichuan peppercorn oil
  • 2 tbsp soy sauce
  • 1 tbsp black vinegar
  • 1 tsp chili powder
  • 1/2 tsp Sichuan peppercorn powder
  • 1/4 cup chopped cilantro
  • 1/4 cup julienned cucumber
  • 1/4 cup julienned carrots
  • 1/4 cup julienned bell pepper

Instructions

  1. Soak the mung bean starch noodles in cold water for 30 minutes, then drain.
  2. In a large bowl, mix the Sichuan peppercorn oil, soy sauce, black vinegar, chili powder, and Sichuan peppercorn powder.
  3. Add the drained noodles to the bowl and toss to coat them in the sauce.
  4. Divide the noodles into serving bowls and top with cilantro, cucumber, carrots, and bell pepper.
  5. Serve the spicy cold noodles immediately and enjoy!
