Spicy Cold Noodles (laphing)
Spicy Cold Noodles, also known as Laphing, are a popular street food in Nepal. This refreshing and spicy dish is perfect for hot summer days.
Ingredients
- 200g mung bean starch noodles
- 2 tbsp Sichuan peppercorn oil
- 2 tbsp soy sauce
- 1 tbsp black vinegar
- 1 tsp chili powder
- 1/2 tsp Sichuan peppercorn powder
- 1/4 cup chopped cilantro
- 1/4 cup julienned cucumber
- 1/4 cup julienned carrots
- 1/4 cup julienned bell pepper
Instructions
- Soak the mung bean starch noodles in cold water for 30 minutes, then drain.
- In a large bowl, mix the Sichuan peppercorn oil, soy sauce, black vinegar, chili powder, and Sichuan peppercorn powder.
- Add the drained noodles to the bowl and toss to coat them in the sauce.
- Divide the noodles into serving bowls and top with cilantro, cucumber, carrots, and bell pepper.
- Serve the spicy cold noodles immediately and enjoy!
