Spicy Conch Fritters (Konk Bala-Bala Pedas)

Ingredients

  • 1 lb conch, finely chopped
  • 1 onion, finely chopped
  • 2 scotch bonnet peppers, finely chopped
  • 2 cloves garlic, minced
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup water
  • Oil for frying

Instructions

  1. In a large bowl, combine the chopped conch, onion, scotch bonnet peppers, and garlic.
  2. In a separate bowl, mix the flour, baking powder, salt, and black pepper.
  3. Add the dry ingredients to the conch mixture and gradually add water, stirring until a thick batter forms.
  4. Heat oil in a deep pot or skillet over medium heat.
  5. Spoon the batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
  6. Remove the fritters from the oil and place them on a paper towel to drain excess oil.
  7. Serve the fritters hot with a side of spicy dipping sauce.
