Ingredients
- 1 lb conch, finely chopped
- 1 onion, finely chopped
- 2 scotch bonnet peppers, finely chopped
- 2 cloves garlic, minced
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup water
- Oil for frying
Instructions
- In a large bowl, combine the chopped conch, onion, scotch bonnet peppers, and garlic.
- In a separate bowl, mix the flour, baking powder, salt, and black pepper.
- Add the dry ingredients to the conch mixture and gradually add water, stirring until a thick batter forms.
- Heat oil in a deep pot or skillet over medium heat.
- Spoon the batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and place them on a paper towel to drain excess oil.
- Serve the fritters hot with a side of spicy dipping sauce.
