Ingredients
- 2 lbs cow foot, cleaned and cut into pieces
- 1 cup palm oil
- 1 onion, finely chopped
- 2 tbsp ground crayfish
- 2 tbsp ground utazi leaves
- 2 tbsp ground ehu seeds
- 2 scotch bonnet peppers, finely chopped
- 2 seasoning cubes
- Salt to taste
Instructions
- Place the cow foot pieces in a pot and cover with water. Boil for 1 hour or until tender.
- Once tender, drain the cow foot and place in a bowl.
- Heat the palm oil in a separate pot, then add the chopped onions and sauté until translucent.
- Add the boiled cow foot to the pot with the onions, then add the ground crayfish, utazi leaves, ehu seeds, scotch bonnet peppers, seasoning cubes, and salt.
- Cook for an additional 10-15 minutes, stirring occasionally to ensure even cooking.
- Once the flavors have melded together, remove from heat and serve hot.
