Spicy Crab And Eggplant Stir-fry

Ingredients

  • 1 lb fresh crab meat
  • 2 medium eggplants, diced
  • 3 cloves garlic, minced
  • 1 red chili, sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 2 tbsp vegetable oil
  • 1/4 cup fresh basil leaves

Instructions

  1. Heat the vegetable oil in a wok or large skillet over high heat.
  2. Add the garlic and red chili, and stir-fry for 1 minute until fragrant.
  3. Add the crab meat and stir-fry for 2-3 minutes until heated through.
  4. Add the diced eggplant and stir-fry for 5-6 minutes until tender.
  5. In a small bowl, mix together the soy sauce, oyster sauce, fish sauce, and sugar. Pour the sauce over the stir-fry and toss to combine.
  6. Add the fresh basil leaves and toss to wilt.
  7. Remove from heat and serve hot.
