Spicy Crab Noodle Soup (Bún Riêu)

Ingredients

  • 1 pound crab meat
  • 1 package firm tofu, diced
  • 2 tomatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon shrimp paste
  • 4 cups chicken broth
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon paprika
  • 8 ounces rice vermicelli noodles
  • 2 green onions, chopped
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. In a large pot, sauté the onion and garlic until fragrant.
  2. Add the crab meat, tofu, and tomatoes to the pot, and cook for 5 minutes.
  3. Stir in the shrimp paste, chicken broth, fish sauce, sugar, and paprika. Simmer for 30 minutes.
  4. While the broth is simmering, cook the rice vermicelli noodles according to the package instructions.
  5. Divide the cooked noodles into serving bowls and ladle the hot soup over the noodles.
  6. Garnish with green onions, cilantro, and serve with lime wedges.
