Ingredients
- 1 pound crab meat
- 1 package firm tofu, diced
- 2 tomatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon shrimp paste
- 4 cups chicken broth
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 1 teaspoon paprika
- 8 ounces rice vermicelli noodles
- 2 green onions, chopped
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the crab meat, tofu, and tomatoes to the pot, and cook for 5 minutes.
- Stir in the shrimp paste, chicken broth, fish sauce, sugar, and paprika. Simmer for 30 minutes.
- While the broth is simmering, cook the rice vermicelli noodles according to the package instructions.
- Divide the cooked noodles into serving bowls and ladle the hot soup over the noodles.
- Garnish with green onions, cilantro, and serve with lime wedges.
