Spicy Creole Beef Stew

Ingredients

  • 2 lbs beef stew meat, cubed
  • 2 tbsp Creole seasoning
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 celery stalks, chopped
  • 1 can (14 oz) diced tomatoes
  • 3 cups beef broth
  • 1 cup okra, sliced
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat.
  2. Season the beef stew meat with Creole seasoning, then brown the meat in the pot for about 5 minutes.
  3. Add the chopped onion, garlic, bell pepper, and celery to the pot. Cook for another 5 minutes until the vegetables are softened.
  4. Pour in the diced tomatoes and beef broth. Add the bay leaves, salt, and pepper. Bring the stew to a boil, then reduce the heat to low and let it simmer for 1.5 hours, stirring occasionally.
  5. Add the sliced okra to the pot and continue to simmer for an additional 30 minutes, or until the beef is tender and the okra is cooked through.
