Ingredients
- 2 lbs beef stew meat, cubed
- 2 tbsp Creole seasoning
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 celery stalks, chopped
- 1 can (14 oz) diced tomatoes
- 3 cups beef broth
- 1 cup okra, sliced
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium-high heat.
- Season the beef stew meat with Creole seasoning, then brown the meat in the pot for about 5 minutes.
- Add the chopped onion, garlic, bell pepper, and celery to the pot. Cook for another 5 minutes until the vegetables are softened.
- Pour in the diced tomatoes and beef broth. Add the bay leaves, salt, and pepper. Bring the stew to a boil, then reduce the heat to low and let it simmer for 1.5 hours, stirring occasionally.
- Add the sliced okra to the pot and continue to simmer for an additional 30 minutes, or until the beef is tender and the okra is cooked through.
