Spicy Creole Beef Stew (Ragoût de bœuf créole épicé)

Ingredients

  • 2 lbs beef stew meat, cubed
  • 3 tbsp Creole seasoning
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 celery stalks, chopped
  • 1 can (14 oz) diced tomatoes
  • 3 cups beef broth
  • 2 bay leaves
  • Salt and pepper to taste
  • Hot sauce, to taste
  • 4 green onions, chopped (for garnish)

Instructions

  1. In a bowl, toss the beef stew meat with Creole seasoning until well coated.
  2. Heat olive oil in a large pot over medium-high heat. Add the seasoned beef and brown on all sides.
  3. Add the onion, garlic, bell pepper, and celery to the pot. Cook until the vegetables are softened.
  4. Pour in the diced tomatoes and beef broth. Add the bay leaves, salt, pepper, and hot sauce. Stir to combine.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the beef is tender.
