Ingredients
- 2 lbs beef stew meat, cubed
- 3 tbsp Creole seasoning
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 celery stalks, chopped
- 1 can (14 oz) diced tomatoes
- 3 cups beef broth
- 2 bay leaves
- Salt and pepper to taste
- Hot sauce, to taste
- 4 green onions, chopped (for garnish)
Instructions
- In a bowl, toss the beef stew meat with Creole seasoning until well coated.
- Heat olive oil in a large pot over medium-high heat. Add the seasoned beef and brown on all sides.
- Add the onion, garlic, bell pepper, and celery to the pot. Cook until the vegetables are softened.
- Pour in the diced tomatoes and beef broth. Add the bay leaves, salt, pepper, and hot sauce. Stir to combine.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the beef is tender.
- Adjust seasoning if needed. Serve the spicy Creole beef stew hot, garnished with chopped green onions.
