Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons cumin seeds
- 1 tablespoon Sichuan peppercorns
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon Shaoxing wine
- 1 tablespoon sugar
- 2 tablespoons vegetable oil
- Salt to taste
Instructions
- Toast the cumin seeds and Sichuan peppercorns in a dry pan until fragrant, then grind them into a coarse powder.
- Marinate the chicken thighs with the ground cumin and Sichuan peppercorn mixture, minced garlic, soy sauce, Shaoxing wine, and sugar for 30 minutes.
- Heat vegetable oil in a pan over medium-high heat, then sear the chicken thighs until golden brown on both sides.
- Reduce the heat to low, cover the pan, and cook the chicken for about 15-20 minutes or until fully cooked.
- Season with salt to taste and serve hot.
