Spicy Cumin Chicken (孜然鸡)

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons cumin seeds
  • 1 tablespoon Sichuan peppercorns
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon sugar
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. Toast the cumin seeds and Sichuan peppercorns in a dry pan until fragrant, then grind them into a coarse powder.
  2. Marinate the chicken thighs with the ground cumin and Sichuan peppercorn mixture, minced garlic, soy sauce, Shaoxing wine, and sugar for 30 minutes.
  3. Heat vegetable oil in a pan over medium-high heat, then sear the chicken thighs until golden brown on both sides.
  4. Reduce the heat to low, cover the pan, and cook the chicken for about 15-20 minutes or until fully cooked.
  5. Season with salt to taste and serve hot.
