Ingredients
- 2 cups bamboo shoots, sliced
- 2 ghost chilies, finely chopped

- 3 garlic cloves, minced

- 1 tomato, chopped
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 2 tbsp oil
- Salt to taste
- 2 cups water
Instructions
- Heat oil in a pan and sauté the onions, garlic, and ginger until golden brown.
- Add the chopped tomatoes and cook until they turn mushy.
- Add the sliced bamboo shoots and chopped ghost chilies. Stir well.
- Add all the dry spices - turmeric powder, cumin powder, coriander powder, red chili powder, and garam masala. Mix well and cook for a few minutes.
- Pour in the water and season with salt. Cover and simmer for 20-25 minutes.
- Once the bamboo shoots are tender, the curry is ready to be served.
