Ingredients

  • 1 pound fresh Chinese wheat noodles
  • 1/2 pound ground beef or lamb
  • 2 tablespoons sesame paste
  • 2 tablespoons soy sauce
  • 2 tablespoons Chinkiang vinegar
  • 2 tablespoons chili oil
  • 1 tablespoon Sichuan peppercorns
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 4 green onions, finely chopped
  • 1 cup chicken or beef broth
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. Boil the noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the ground meat and cook until browned.
  3. Add the garlic, ginger, and Sichuan peppercorns to the skillet and cook for 2 minutes.
  4. Stir in the sesame paste, soy sauce, Chinkiang vinegar, and chili oil. Mix well.
  5. Pour in the broth and let the sauce simmer for 5 minutes.
  6. Divide the noodles into serving bowls and ladle the spicy meat sauce over the top.
  7. Garnish with green onions and serve hot.
