Ingredients
- 1 pound fresh Chinese wheat noodles
- 1/2 pound ground beef or lamb
- 2 tablespoons sesame paste
- 2 tablespoons soy sauce
- 2 tablespoons Chinkiang vinegar
- 2 tablespoons chili oil
- 1 tablespoon Sichuan peppercorns
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 4 green onions, finely chopped
- 1 cup chicken or beef broth
- 2 tablespoons vegetable oil
- Salt to taste
Instructions
- Boil the noodles according to package instructions, then drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the ground meat and cook until browned.
- Add the garlic, ginger, and Sichuan peppercorns to the skillet and cook for 2 minutes.
- Stir in the sesame paste, soy sauce, Chinkiang vinegar, and chili oil. Mix well.
- Pour in the broth and let the sauce simmer for 5 minutes.
- Divide the noodles into serving bowls and ladle the spicy meat sauce over the top.
- Garnish with green onions and serve hot.
