Ingredients
- 500g beef, thinly sliced
- 1 cup sliced potatoes
- 1 cup sliced bell peppers
- 1 cup sliced onions
- 3-4 dried red chilies
- 3-4 garlic cloves, minced
- 1-inch ginger, thinly sliced
- 2 tbsp vegetable oil
- 2 tbsp Sichuan peppercorns
- 2 tbsp doubanjiang (broad bean paste)
- 2 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- 1/2 cup chicken broth
- Green onions, for garnish
Instructions
- Heat vegetable oil in a wok or large skillet over medium heat.
- Add dried red chilies, Sichuan peppercorns, garlic, and ginger. Stir-fry until fragrant.
- Add beef slices and stir-fry until browned.
- Add doubanjiang, soy sauce, Shaoxing wine, and sugar. Stir to combine.
- Add potatoes, bell peppers, and onions. Stir-fry for a few minutes.
- Pour in the chicken broth and bring to a simmer. Cover and cook until the beef and vegetables are tender.
- Garnish with green onions and serve hot.
