Ingredients
- 6 hard-boiled eggs, peeled and halved
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1/4 cup coconut milk
- 2 green chilies, slit
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chilies, sauté for a minute.
- Now, add the tomato puree and cook until the oil separates from the mixture.
- Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes.
- Pour in the coconut milk and bring the mixture to a gentle simmer.
- Add the hard-boiled eggs and simmer for 5-7 minutes, allowing the flavors to infuse into the eggs.
- Sprinkle garam masala and garnish with fresh cilantro before serving.
