Spicy Egg Curry

Ingredients

  • 6 hard-boiled eggs, peeled and halved
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1/4 cup coconut milk
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and green chilies, sauté for a minute.
  3. Now, add the tomato puree and cook until the oil separates from the mixture.
  4. Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes.
  5. Pour in the coconut milk and bring the mixture to a gentle simmer.
  6. Add the hard-boiled eggs and simmer for 5-7 minutes, allowing the flavors to infuse into the eggs.
  7. Sprinkle garam masala and garnish with fresh cilantro before serving.
