Spicy Egg Kothu Parotta

Ingredients

  • 4 parottas, shredded
  • 3 eggs
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon cumin seeds
  • 1/4 cup chopped coriander leaves
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and green chilies. Sauté until the onions turn golden brown.
  2. Add the chopped tomatoes and cook until they turn mushy.
  3. Crack the eggs into the pan and scramble them with the onion-tomato mixture.
  4. Add turmeric powder, red chili powder, and garam masala. Mix well.
  5. Add the shredded parottas and mix everything together until well combined.
  6. Garnish with chopped coriander leaves and serve hot.
