Spicy Egg Masala

Ingredients
- 4 hard-boiled eggs, peeled and halved
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 2 green chilies, slit
- 1 teaspoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1/2 teaspoon cumin seeds
- 1/4 cup chopped coriander leaves
- Salt to taste
- 2 tablespoons oil
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and green chilies. Saute until onions turn golden brown.
- Add ginger-garlic paste and saute for a minute. Then, add the tomato puree and cook until the oil separates.
- Now, add red chili powder, turmeric powder, and salt. Mix well and cook for a few minutes.
- Add the halved eggs and gently mix with the masala. Cook for 5 minutes on low heat.
- Sprinkle garam masala and chopped coriander leaves. Mix gently and turn off the heat.
- Spicy Egg Masala is ready to be served hot with rice or roti.
