Spicy Egg Masala

Ingredients

  • 4 hard-boiled eggs, peeled and halved
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon cumin seeds
  • 1/4 cup chopped coriander leaves
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and green chilies. Saute until onions turn golden brown.
  2. Add ginger-garlic paste and saute for a minute. Then, add the tomato puree and cook until the oil separates.
  3. Now, add red chili powder, turmeric powder, and salt. Mix well and cook for a few minutes.
  4. Add the halved eggs and gently mix with the masala. Cook for 5 minutes on low heat.
  5. Sprinkle garam masala and chopped coriander leaves. Mix gently and turn off the heat.
  6. Spicy Egg Masala is ready to be served hot with rice or roti.
