Patlıcan Ezmesi, also known as Spicy Eggplant Dip, is a traditional Gagauz cuisine dish that is perfect for serving as an appetizer or a side dish. This flavorful dip is made with roasted eggplants, garlic, and spices, creating a delicious and aromatic spread that pairs well with bread or crackers.
Ingredients
- 2 large eggplants
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt to taste
- Black pepper to taste
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the stovetop grill or a grill pan over medium-high heat.
- Prick the eggplants with a fork and place them on the grill. Cook, turning occasionally, until the skin is charred and the flesh is soft, about 20 minutes.
- Remove the eggplants from the grill and let them cool. Peel off the charred skin and chop the flesh.
- In a bowl, combine the chopped eggplant, minced garlic, olive oil, paprika, cayenne pepper, salt, black pepper, lemon juice, and chopped parsley. Mix well.
- Adjust seasoning to taste and refrigerate for at least 30 minutes before serving.
