Ingredients
- 2 large eggplants, cut into cubes
- 3 tablespoons vegetable oil
- 4 cloves garlic, minced
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1 teaspoon cornstarch
- 1 teaspoon Sichuan peppercorns
- 1 teaspoon chili flakes
- Salt to taste
Instructions
- In a small bowl, mix together the soy sauce, rice vinegar, sugar, and cornstarch. Set aside.
- Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the eggplant cubes and stir-fry until they are tender and slightly browned. Remove the eggplant from the wok and set aside.
- In the same wok, add a bit more oil if needed. Add the garlic, green onions, Sichuan peppercorns, and chili flakes. Stir-fry for about 1 minute until fragrant.
- Return the cooked eggplant to the wok. Pour the soy sauce mixture over the eggplant and toss to coat. Cook for an additional 2-3 minutes until the sauce thickens and coats the eggplant.
- Season with salt to taste and serve hot.
