Spicy Eggplant with Garlic Sauce (Suàn Róng Qie Zi)

Ingredients

  • 2 large eggplants, cut into cubes
  • 3 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon Sichuan peppercorns
  • 1 teaspoon chili flakes
  • Salt to taste

Instructions

  1. In a small bowl, mix together the soy sauce, rice vinegar, sugar, and cornstarch. Set aside.
  2. Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the eggplant cubes and stir-fry until they are tender and slightly browned. Remove the eggplant from the wok and set aside.
  3. In the same wok, add a bit more oil if needed. Add the garlic, green onions, Sichuan peppercorns, and chili flakes. Stir-fry for about 1 minute until fragrant.
  4. Return the cooked eggplant to the wok. Pour the soy sauce mixture over the eggplant and toss to coat. Cook for an additional 2-3 minutes until the sauce thickens and coats the eggplant.
  5. Season with salt to taste and serve hot.
