Spicy Fish Fillet Soup (麻辣鱼片汤)

Ingredients

  • 500g fish fillet, sliced
  • 3-4 slices ginger
  • 2 green onions, chopped
  • 1 tbsp Sichuan peppercorns
  • 2 tbsp chili bean paste
  • 4 cups fish or chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp Chinese cooking wine
  • 1 tsp sugar
  • Salt to taste
  • 2 tbsp vegetable oil
  • Water, as needed

Instructions

  1. In a pot, heat the vegetable oil over medium heat. Add the Sichuan peppercorns, ginger, and green onions. Stir-fry until fragrant.
  2. Add the chili bean paste and continue to stir-fry for another minute.
  3. Pour in the fish or chicken broth, soy sauce, Chinese cooking wine, and sugar. Bring to a boil.
  4. Add the fish fillet slices and simmer for 5-8 minutes until the fish is cooked through.
  5. Adjust the seasoning with salt and add water if needed to adjust the consistency of the soup.
  6. Serve hot and garnish with additional green onions if desired.
