Spicy Fried Cucumber (Málà Huángguā)

Ingredients

  • 2 large cucumbers, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon Sichuan peppercorns
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon chili flakes
  • 1 teaspoon sesame oil
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a wok or skillet over high heat.
  2. Add the garlic and Sichuan peppercorns, and stir-fry for 30 seconds until fragrant.
  3. Add the sliced cucumbers and stir-fry for 2-3 minutes until they start to soften.
  4. Stir in the green onions, soy sauce, rice vinegar, sugar, chili flakes, and sesame oil. Cook for another 1-2 minutes.
  5. Season with salt to taste and remove from heat.
  6. Transfer to a serving plate and serve hot or cold.
