Spicy Fried Eggplant (Málà Qiézi)
Málà Qiézi, or Spicy Fried Eggplant, is a popular dish in Tianjin Cuisine known for its spicy and flavorful taste. This dish is perfect for eggplant lovers and those who enjoy a little kick of heat in their meals.
Ingredients
- 2 large eggplants, cut into cubes
- 3 tablespoons vegetable oil
- 3 garlic cloves, minced
- 1 tablespoon ginger, minced
- 2 green onions, chopped
- 1 red bell pepper, sliced
- 2 tablespoons doubanjiang (spicy bean paste)
- 1 tablespoon soy sauce
- 1 tablespoon Chinese black vinegar
- 1 teaspoon sugar
- 1 teaspoon Sichuan peppercorns
- 1/2 cup water
- Salt to taste
Instructions
- Heat the vegetable oil in a wok or large skillet over medium heat.
- Add the eggplant cubes and stir-fry for 5-7 minutes until they are golden and tender. Remove the eggplant from the wok and set aside.
- In the same wok, add a little more oil if needed, then stir-fry the garlic, ginger, and green onions until fragrant.
- Add the red bell pepper and continue to stir-fry for another 2-3 minutes.
- Stir in the doubanjiang, soy sauce, Chinese black vinegar, sugar, and Sichuan peppercorns.
- Pour in the water and bring the mixture to a simmer.
- Return the cooked eggplant to the wok and stir to combine with the sauce. Cook for an additional 2-3 minutes.
- Season with salt to taste and serve hot.
