Spicy Fried Eggplant (Málà Qiézi)

Ingredients

  • 2 large eggplants, cut into cubes
  • 3 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 2 green onions, chopped
  • 1 red bell pepper, sliced
  • 2 tablespoons doubanjiang (spicy bean paste)
  • 1 tablespoon soy sauce
  • 1 tablespoon Chinese black vinegar
  • 1 teaspoon sugar
  • 1 teaspoon Sichuan peppercorns
  • 1/2 cup water
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a wok or large skillet over medium heat.
  2. Add the eggplant cubes and stir-fry for 5-7 minutes until they are golden and tender. Remove the eggplant from the wok and set aside.
  3. In the same wok, add a little more oil if needed, then stir-fry the garlic, ginger, and green onions until fragrant.
  4. Add the red bell pepper and continue to stir-fry for another 2-3 minutes.
  5. Stir in the doubanjiang, soy sauce, Chinese black vinegar, sugar, and Sichuan peppercorns.
  6. Pour in the water and bring the mixture to a simmer.
  7. Return the cooked eggplant to the wok and stir to combine with the sauce. Cook for an additional 2-3 minutes.
  8. Season with salt to taste and serve hot.
