Ingredients

  • 500g goat meat, cut into cubes
  • 2 ripe plantains, peeled and sliced
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 3 cloves of garlic, minced
  • 1 inch of ginger, grated
  • 2 hot peppers, chopped
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of paprika
  • 1 cup of vegetable oil
  • Salt to taste

Instructions

  1. In a large bowl, season the goat meat with salt, black pepper, and paprika. Let it marinate for 30 minutes.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the marinated goat meat and fry until golden brown. Remove the meat from the skillet and set aside.
  3. In the same skillet, sauté the onions, garlic, ginger, and hot peppers until fragrant.
  4. Add the diced tomatoes and cook until they soften.
  5. Return the fried goat meat to the skillet and stir to combine with the tomato mixture. Cook for an additional 15 minutes.
  6. Meanwhile, in a separate pot, boil the sliced plantains until soft. Drain the water and mash the plantains to make fufu.
  7. Serve the spicy fried goat meat with the plantain fufu and enjoy!
