Ingredients
- 400g fresh yellow noodles
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 red chili, sliced
- 1 green chili, sliced
- 200g firm tofu, cut into cubes
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon sweet soy sauce (kecap manis)
- 1 tablespoon tomato ketchup
- 1 teaspoon curry powder
- 1 teaspoon chili powder
- Salt to taste
- Chopped spring onions for garnish
- Sliced red chilies for garnish
Instructions
- Boil the fresh yellow noodles according to package instructions, then drain and set aside.
- Heat vegetable oil in a wok or large frying pan over high heat. Add the sliced onion, minced garlic, and sliced red and green chilies. Stir-fry for 2-3 minutes until fragrant.
- Add the tofu cubes and continue to stir-fry for another 2 minutes.
- Push the ingredients to one side of the wok, crack the eggs into the empty space, and scramble them until they are cooked.
- Add the boiled noodles to the wok, followed by soy sauce, sweet soy sauce, tomato ketchup, curry powder, chili powder, and salt. Stir-fry for 3-4 minutes until everything is well combined.
- Transfer the spicy fried noodles to serving plates and garnish with chopped spring onions and sliced red chilies.
