Ingredients

  • 400g fresh yellow noodles
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red chili, sliced
  • 1 green chili, sliced
  • 200g firm tofu, cut into cubes
  • 2 eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 tablespoon tomato ketchup
  • 1 teaspoon curry powder
  • 1 teaspoon chili powder
  • Salt to taste
  • Chopped spring onions for garnish
  • Sliced red chilies for garnish

Instructions

  1. Boil the fresh yellow noodles according to package instructions, then drain and set aside.
  2. Heat vegetable oil in a wok or large frying pan over high heat. Add the sliced onion, minced garlic, and sliced red and green chilies. Stir-fry for 2-3 minutes until fragrant.
  3. Add the tofu cubes and continue to stir-fry for another 2 minutes.
  4. Push the ingredients to one side of the wok, crack the eggs into the empty space, and scramble them until they are cooked.
  5. Add the boiled noodles to the wok, followed by soy sauce, sweet soy sauce, tomato ketchup, curry powder, chili powder, and salt. Stir-fry for 3-4 minutes until everything is well combined.
  6. Transfer the spicy fried noodles to serving plates and garnish with chopped spring onions and sliced red chilies.
