Spicy Fried Potatoes (Málà Tǔdòu)

Ingredients

  • 4 medium potatoes, peeled and sliced into thin rounds
  • 2 tablespoons vegetable oil
  • 3-4 dried red chilies, chopped
  • 1 teaspoon Sichuan peppercorns
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 green onion, chopped (for garnish)

Instructions

  1. Heat the vegetable oil in a wok or large skillet over medium heat.
  2. Add the dried red chilies and Sichuan peppercorns to the oil, and stir-fry for 1-2 minutes until fragrant.
  3. Add the sliced potatoes to the wok and stir-fry for 8-10 minutes, or until they are golden and crispy.
  4. Push the potatoes to the side of the wok, and add the minced garlic to the center. Stir-fry for 30 seconds.
  5. Combine the garlic with the potatoes, then add the soy sauce, sugar, and salt. Stir-fry for an additional 2-3 minutes.
  6. Transfer the spicy fried potatoes to a serving dish, garnish with chopped green onions, and serve hot.
