Ingredients
- 4 medium potatoes, peeled and sliced into thin rounds
- 2 tablespoons vegetable oil
- 3-4 dried red chilies, chopped
- 1 teaspoon Sichuan peppercorns
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 green onion, chopped (for garnish)
Instructions
- Heat the vegetable oil in a wok or large skillet over medium heat.
- Add the dried red chilies and Sichuan peppercorns to the oil, and stir-fry for 1-2 minutes until fragrant.
- Add the sliced potatoes to the wok and stir-fry for 8-10 minutes, or until they are golden and crispy.
- Push the potatoes to the side of the wok, and add the minced garlic to the center. Stir-fry for 30 seconds.
- Combine the garlic with the potatoes, then add the soy sauce, sugar, and salt. Stir-fry for an additional 2-3 minutes.
- Transfer the spicy fried potatoes to a serving dish, garnish with chopped green onions, and serve hot.
