Spicy Fried Tofu Skin (Málà Dòupí)

Ingredients

  • 8 pieces of dried tofu skin
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon Sichuan peppercorns
  • 2 tablespoons doubanjiang (broad bean paste with chili)
  • 1 tablespoon soy sauce
  • 1 tablespoon Chinese cooking wine
  • 1 teaspoon sugar
  • 1 cup vegetable broth
  • 2 green onions, chopped

Instructions

  1. Soak the dried tofu skin in hot water for 10 minutes, then cut into bite-sized pieces.
  2. Heat the vegetable oil in a wok over medium heat, then add the garlic and Sichuan peppercorns. Stir-fry until fragrant.
  3. Add the doubanjiang and stir-fry for another minute.
  4. Stir in the soy sauce, Chinese cooking wine, and sugar.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Add the tofu skin pieces and simmer for 10 minutes, or until the sauce has thickened.
  7. Garnish with chopped green onions before serving.
