Spicy Garlic Eggplant (La Jiao Suàn Qie Zi)

Ingredients

  • 2 large eggplants, cut into cubes
  • 3 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2 green chilies, sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon chili sauce
  • 1 teaspoon sugar
  • Salt to taste
  • 1/4 cup water

Instructions

  1. Heat 2 tablespoons of vegetable oil in a wok over medium-high heat.
  2. Add the cubed eggplants and stir-fry for 5-6 minutes until they are tender. Remove from the wok and set aside.
  3. Heat the remaining 1 tablespoon of vegetable oil in the same wok.
  4. Add minced garlic and sliced green chilies, and stir-fry for 1-2 minutes until fragrant.
  5. Return the cooked eggplants to the wok.
  6. Add soy sauce, chili sauce, sugar, salt, and water. Stir-fry for another 2-3 minutes until the eggplants are coated with the sauce.
  7. Transfer to a serving dish and serve hot with steamed rice.
