Spicy Garlic Eggplant (La Jiao Suàn Qie Zi)
La Jiao Suàn Qie Zi, also known as Spicy Garlic Eggplant, is a popular dish in Pakistani Chinese cuisine. It features tender eggplant stir-fried with spicy garlic sauce, creating a flavorful and aromatic dish that pairs perfectly with steamed rice.
Ingredients
- 2 large eggplants, cut into cubes
- 3 tablespoons vegetable oil
- 4 cloves garlic, minced
- 2 green chilies, sliced
- 1 tablespoon soy sauce
- 1 tablespoon chili sauce
- 1 teaspoon sugar
- Salt to taste
- 1/4 cup water
Instructions
- Heat 2 tablespoons of vegetable oil in a wok over medium-high heat.
- Add the cubed eggplants and stir-fry for 5-6 minutes until they are tender. Remove from the wok and set aside.
- Heat the remaining 1 tablespoon of vegetable oil in the same wok.
- Add minced garlic and sliced green chilies, and stir-fry for 1-2 minutes until fragrant.
- Return the cooked eggplants to the wok.
- Add soy sauce, chili sauce, sugar, salt, and water. Stir-fry for another 2-3 minutes until the eggplants are coated with the sauce.
- Transfer to a serving dish and serve hot with steamed rice.
