Spicy Goat Kebabs (Brochettes de Chèvre Épicées)
Brochettes de Chèvre Épicées, or Spicy Goat Kebabs, are a popular dish in Gabonese cuisine. The tender goat meat is marinated in a flavorful blend of spices, then skewered and grilled to perfection. These kebabs are perfect for a festive gathering or a special family meal.
Ingredients
- 1.5 lbs goat meat, cut into 1-inch cubes
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the chopped onion, minced garlic, grated ginger, paprika, cayenne pepper, ground cumin, ground coriander, vegetable oil, salt, and pepper. Mix well to form a marinade.
- Add the goat meat cubes to the marinade and toss to coat the meat evenly. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated goat meat onto the soaked wooden skewers, dividing the meat evenly among the skewers.
- Grill the kebabs for about 10-12 minutes, turning occasionally, until the meat is cooked to your desired doneness and has a nice charred exterior.
- Remove the kebabs from the grill and let them rest for a few minutes before serving.
