Spicy Goat Stew (Madesu de chèvre pimenté)

Ingredients

  • 2 lbs goat meat, cut into chunks
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 2 tsp ginger, grated
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp ground coriander
  • 1/2 tsp ground cloves
  • 1/2 cup peanut butter
  • 4 cups beef or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions and cook until softened.
  2. Add the goat meat to the pot and brown on all sides.
  3. Stir in the garlic, ginger, paprika, cayenne pepper, coriander, and ground cloves. Cook for 2 minutes to toast the spices.
  4. Add the diced tomatoes, peanut butter, and broth to the pot. Stir to combine all the ingredients.
  5. Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the goat meat is tender.
  6. Season with salt and pepper to taste.
  7. Serve the spicy goat stew hot with rice or crusty bread.
