Spicy Goat Stew (Madesu de chèvre pimenté)

Ingredients
- 2 lbs goat meat, cut into chunks
- 2 onions, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 2 tsp ginger, grated
- 2 tsp paprika
- 1 tsp cayenne pepper
- 1 tsp ground coriander
- 1/2 tsp ground cloves
- 1/2 cup peanut butter
- 4 cups beef or vegetable broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions and cook until softened.
- Add the goat meat to the pot and brown on all sides.
- Stir in the garlic, ginger, paprika, cayenne pepper, coriander, and ground cloves. Cook for 2 minutes to toast the spices.
- Add the diced tomatoes, peanut butter, and broth to the pot. Stir to combine all the ingredients.
- Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the goat meat is tender.
- Season with salt and pepper to taste.
- Serve the spicy goat stew hot with rice or crusty bread.
