Spicy Grilled Lobster With Coconut Curry Sauce

Ingredients

  • 4 lobster tails
  • 1 cup coconut milk
  • 2 tbsp red curry paste
  • 2 tbsp lime juice
  • 2 tbsp brown sugar
  • 1 tsp fish sauce
  • 1 tsp grated ginger
  • 2 cloves garlic, minced
  • 1 red chili, finely chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Cut the lobster tails in half lengthwise and season with salt and pepper.
  3. In a bowl, mix together the coconut milk, red curry paste, lime juice, brown sugar, fish sauce, ginger, garlic, and red chili to make the coconut curry sauce.
  4. Grill the lobster tails for 5-6 minutes on each side, until the meat is opaque and lightly charred.
  5. During the last few minutes of grilling, baste the lobster tails with the coconut curry sauce.
  6. Remove the lobster from the grill and serve with the remaining coconut curry sauce on the side.
