Ingredients
- 4 lobster tails
- 1 cup coconut milk

- 2 tbsp lime juice

- 1 red chili, finely chopped
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Cut the lobster tails in half lengthwise and season with salt and pepper.
- In a bowl, mix together the coconut milk, red curry paste, lime juice, brown sugar, fish sauce, ginger, garlic, and red chili to make the coconut curry sauce.
- Grill the lobster tails for 5-6 minutes on each side, until the meat is opaque and lightly charred.
- During the last few minutes of grilling, baste the lobster tails with the coconut curry sauce.
- Remove the lobster from the grill and serve with the remaining coconut curry sauce on the side.
